Cafe Max is in a dollhouse of a building on Montauk Highway at the western edge of East Hampton Village. Its steady, year-round patrons find the cooking top-notch. The medium-size menu leans toward well-prepared fish and bay scallops in season and soft-shell crabs are particularly popular, as is the one-pound black angus rib-eye steak. Salads, such as pear with walnuts and gorgonzola, are recommended and diners rarely turn down the homemade desserts. A $22 prix fixe is available all night Sunday-Thursday, Friday and Saturday from 5:30 to 5:55, and on Saturday at 5:30 sharp. It is not available on holiday weekends.
