Manna is an intimate restaurant tucked away behind Water Mill Main Street. This is its second year under Chef Marco Barrila, and he is creating a new dining experience. Instead of choosing dishes from a menu, diners will be asked what type of food they want and then receive a series of small plates. The chef will still make his specialities, such as an eggplant timbal, crispy duck rolls, grilled octopus with chimichurri, lobster risotto, and shrimp lollipops. The restaurant is open year-round, with a fireplace in winter and courtyard tables in warm weather. Off-site catering is available through Manna’s Insatiable Eats company.

Suki Zuki has a popular robata (Japanese open-fire grill) in addition to its sushi and sashimi bar, but a limited number of tables. The restaurant gets packed during the summer, but the freshness of the ingredients is worth the wait. The decor is spare with pretty frosted-glass and twig-covered lamps. Behind the long wooden counter, two sushi chefs work away at one end and a robata chef at the other, juggling skewers over open flames. Suki Zuki will serve Long Island blowfish when it can be found, and its robata choices are numerous. Eat in or take out. No reservations.
