Rachel and David want those who dine at Rumba to feel like they've been transported to a laid-back and sunny Caribbean island. At press time, Rumba had half-price mojitas on Mondays and live reggae on Thursdays. Rum concoctions from its collection of aged rums and specialty margaritas fill the bill, but Rumba also offers the couple's favorite wines. Entrees such as a jerk chicken platter and soy-and-sugar cane salmon come with coconut risotto, papaya, and avocado dress up a scallop salad, and tacos and sandwiches have an island flair.
