Tom Colicchio, who has a mini restaurant empire, opened an 85-seat Bridgehampton restaurant in the new 22-room inn and spa at the old Bull’s Head Inn. The menu will be focused on locally grown vegetables, including harvests from a nearby acre. The cooking will have contemporary American and Italian elements. Mr. Colicchio is known for Craft, which he opened in Manhattan in 2001, and is responsible for several Craft branches, in Las Vegas, Los Angeles, and at Foxwoods in Connecticut, along with “wichcraft” sandwich shops in other venues. He has won several James Beard Foundation awards and has been a head judge on Bravo’s hit reality cooking series, “Top Chef.”
