Tom Colicchio, who has a mini restaurant empire, opened this 85-seat Bridgehampton restaurant in the new 22-room inn and spa at the old Bull's Head Inn in 2013. The menu is focused on locally grown vegetables, including harvests from a nearby acre. The cooking has contemporary American and Italian elements. The menu features some tasty seasonal starters, like kale salad with pine nuts, currants, and pecorino Romano, or asparagus with egg, rhubarb, and paddlefish caviar. Pastas include smoked linguine with poached egg and pancetta, while entrees include blackfish with razor clams, grits, and baby leeks or roasted lobster with carrot fregola, potatoes, and bok choy. Mr. Colicchio is known for Craft, which he opened in Manhattan in 2001, and is responsible for several Craft branches, in Las Vegas, Los Angeles, and at Foxwoods in Connecticut, along with "wichcraft" sandwich shops elsewhere. He has won several James Beard Foundation awards and been a head judge on Bravo's hit reality cooking series, "Top Chef."
