With throngs of summer visitors soon to descend on the town and its ocean beaches, a New England manufacturer of surfboards has expanded to Amagansett, where experienced and aspiring surfers alike can build their own wooden surfboards in three or four-day classes starting on May 12. 

Grain Surfboards of York, Me., has established Grain-NY, a workshop that has taken occupancy of the lower level of the red barn at 11 Indian Wells Highway. Classes will include the materials, supplies, and instruction to build a board, as well as two meals per day. Students will leave with a completed surfboard and the materials and supplies needed for glassing, which can also be done by Grain-NY staff for an additional fee. 

The company was founded in 2005, the same year that Clark Foam, the California company that for decades had provided the majority of foam slabs from which surfboards are shaped, abruptly ceased operation. Mike LaVecchia, Grain Surfboards’ founder, was an early snowboarding enthusiast, later obtaining a captain’s license and operating a commercial sailing vessel as well as building boats. His passions clearly merged with Grain Surfboards. 

Brian Schopfer and Patrick Fleury, brothers-in-law who live in East Hampton and Amagansett respectively, lead the staff that will conduct classes in Amagansett. “I actually went up to Maine and did one of the classes that we’ll be offering with my brother-in-law,” Mr. Schopfer said last week. “We were really taken by the experience, and the more we looked into it, the more we thought it would be something we’d like to share with people.” 

Mr. Fleury, who is from Maine, was the surfer, said Mr. Schopfer, a Colorado native who snowboarded. “I got into it from the woodworking perspective,” he said. “I really got into surfing after I built the board. When you build something yourself like this, you can’t help but want to put it in the water and try it out.” 

Workshops typically last four days, Mr. Schopfer said, but Grain-NY staffers will perform some of the preparation work for those choosing the three-day option. Classes will be limited to eight students. 

The wood used in Grain surfboards are sourced from mills and forestlands in Maine that practice sustainable harvesting, and students will use only hand tools. For the finishing work, “We use a bio-based epoxy that has zero VOCs” (volatile organic compounds), Mr. Schopfer said. “It’s as healthy and environmentally responsible an epoxy as you can get.” Coupled with the surfboard’s wood construction, “It’s a more sustainable, environmentally friendly way to do it.”

Classes cost $2,675, and those interested can enroll at the company’s website, grainsurfboards.com/ny, or by calling 267-9283. 

In addition to its Indian Wells Highway location, workshops will be offered across the street at the Amagansett Historical Association on Father’s Day weekend, June 16 to 19, and again July 7 to 10. Two-hour workshops for building hand planes, used for body surfing, will also take place there on July 4. Workshops are scheduled into December: “We’re trying to figure a way that in the off-season locals can find something a little more manageable as far as price and timing,” Mr. Schopfer said.

A new dance studio on Montauk’s Main Street

Laura Sisco of Montauk knew from the time she was 3 years old that she wanted to spend her life dancing. Now 27, and with a wide range of dance experience, she has opened Creative Edge Studio, a dance school in Montauk. 

Before opening the school, Ms. Sisco taught classes in the parish center of St. Therese of Lisieux Catholic Church and the Montauk Playhouse Community Center and in East Hampton at Elements Fitness Studio and the Y.M.C.A. East Hampton RECenter, where she was a dance instructor and camp director for 3 years before going out on her own.

The new studio on Montauk’s Main Street was the former space of Atlantic Beach Realty, but you would never guess it was a real estate office before it was transformed. The space, which is owned by her parents, Dennis and Rosanna Sisco, was totally renovated by her father. The walls are painted a deep purple, with one side lined with elevated ballet bars and the other with floor to ceiling mirrors, which the students, ages 2 and up, love. 

“They couldn’t see themselves dance before. They love watching themselves and it teaches them discipline, respect, and preparedness,” she said, explaining that watching themselves move teaches the students proper form. She also teaches classes in East Hampton at Elements Fitness. 

When she was younger, a lot of naysayers told her she could never make a living from dance, but, she said, there was never a question in her mind that she could. And with her parents support, driving her to classes and cheering her on, and the passion she had for it, “I knew I could do it. If you work hard enough it can happen,” she said.

After graduating from the Montauk School and East Hampton High School, she attended Adelphi University, graduating in 2010 with a bachelor of fine arts degree in dance.

She is a co-founder of the nonprofit East End Young Artists Initiative and has choreographed many of its musical productions, including its annual “Best of Broadway.” At East Hampton High School, she directed the musical “Rent” two weeks ago, and has also choreographed such productions as “42nd Street,” “Mame,” “Hello, Dolly,” and “Grease.” 

Creative Edge will produce two recitals a year, one in the spring and the other at Christmas. The first was held in December at East Hampton High School. A schedule of upcoming classes and events is listed on Ms. Sisco’s website, creativeedgedance.com.

This summer families will be able to keep the routine of stopping at the Sagg Store for sandwiches before heading to the beach, though there may just be a certain je ne sais quoi to doing so, as customers will find a French flair to the food and a different name on the door. 

Pierre Weber, as in Pierre’s restaurant in Bridgehampton, bought the Saga­ponack institution, closing the purchase of the business and the lease of the space on March 1, according to Melissa Green of Sotheby’s International Realty in Bridgehampton, who brokered the deal. Rich and Karen Thayer, fourth-generation owners, are holding on to the building, though they have decided to retire from the food business after a decade. 

Mr. Weber has plans for a high-end takeout shop serving everything from soups and sandwiches to quiches and croissants, coffee and snacks to smoothies and homemade ice cream. The front portion will sell grab-and-go sandwiches, pastries, vegetables, and juices, while the back will offer rotisserie chicken, more prepared foods, and catering. 

“It will be very similar in terms of the product — and French,” Mr. Weber said. 

When he first came to the South Fork 20 years ago, he wandered into the Sagg Store and ordered a tuna melt. “I had no idea what a tuna melt was,” said Mr. Weber, who was raised in Paris, where his parents owned a bakery. “I never thought I would have this opportunity. When it came, I grabbed it.” 

While he will “gut it out,” he will “put it back in” and “respect the history.” He wants the business to stay a center and meeting place for the Sagaponack community. 

The store on Sagg Main Street, with its large plate-glass windows and front porch that it shares with the post office, has been a throwback of sorts despite a rapidly changing landscape. Gone are the days when the small village was home only to potato farmers. In 2015 Sagaponack was the most expensive ZIP code in the country, according to the online news site Business Insider. But while the price tags may have changed, food, groceries, and basic supplies have been a constant.

The building has always been a general store and post office. The older part dates to 1878, when Thaddeus Edwards ran it. An addition was built around 1900. 

The Hildreth family bought the building about 20 years after it was constructed, and it has remained in the family ever since. Mr. Thayer and his wife purchased the building in the late 1990s from Mr. Thayer’s uncle, Merrall Hildreth, a postmaster who ran it for three decades as the Hildreth and Co. General Store. 

However, the couple didn’t take over the business until 2006, after a tenant’s lease expired. They renovated the interior but stayed true to the store’s old feel. “Richie used to stick his hand in the candy jar in front and wanted it to stay the same,” his wife said at the time. They changed the name from the Sagaponack General Store to keep with how locals referred to it. 

The move is bittersweet for Mr. Thayer, whose daughters, Mimi and Kasey, were doing most of the work there. “Times changed. People change,” he said by phone last week. When his family took over the Sagg Store, he retired from construction. “Now I guess I’m just going to retire.” 

The post office will remain (Mr. Hildreth divided it and the general store into separate spaces in the early 1970s). Mr. Thayer said the postal service has another five years on its lease and three more five-year options. 

Mr. Weber said he is putting out a call for “local talent” to work in the store. He hopes to open the front portion by the week after Easter, and the back by Memorial Day weekend. Two thousand sixteen “is going to be a good year for me. I feel very happy,” he said.
