Cranberry Chutney

Thu, 11/14/2019 - 14:23

3 cups cranberries
2 ripe pears, peeled, cored and chopped
1 cup broken walnut meats
1 cup black raisins
1 ½ cup golden raisins
½ cup chopped pitted dates
1 tsp. grated orange peel
1 cinnamon stick
1 tsp. whole cloves
1 tsp. chopped fresh ginger (or ½ tsp. ground ginger)
1 ⅓ cups orange juice
1 cup honey
2 Tbs. brandy

Combine all ingredients except brandy in a large saucepan, bring to a boil, lower heat and simmer for 30 minutes. Stir in brandy. Spoon into sterilized jars and seal _ or store in refrigerator. It’s fairly tart so you may add more honey if you like it sweeter.

Makes one quart.
