In Season: Whimseys Gingerbread Cookies

Gingerbread cookies, like these baked in 2022, are a classic holiday treat.

If you are in the mood to make gingerbread cookies, Whimseys offers this excellent recipe.

Whimseys Gingerbread Men

Blend until creamy:
1/4 cup butter
1/2 cup white or brown sugar

Beat in:
1/2 cup dark molasses

Sift together:
3 1/2 cups sifted flour
1 tsp. soda
1/4 tsp. ground cloves
1/2 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. salt

Add the sifted ingredients to the butter mixture in three parts, alternately with 1/4 cup water.

Mix with a fork or fingertips until you can gather a ball of dough. Grease a cookie sheet and roll the dough out on it. Cut out gingerbread men, remove excess dough (which may be rerolled in the same fashion on another cookie sheet), and bake about eight minutes, depending on the thickness of the cookies, until lightly browned around the edges.

Cool slightly before removing them from the cookie sheet. (Remember to make a small hole for hanging before you bake them if you intend them as ornaments.)

Editor's note: Whimseys was a popular shop in East Hampton for many years, owned by Marlys Dohanos, the mother of the photographer who snapped the photo above. To read all about it, see "Love and Ginger," Nov. 30, 2022, East Magazine.
